Your canned coconut milk should not contain emulsifiers. That's so the fat can separate from the water, when placed in the fridge. My local market had Native Forest, which only has 3 ingredients; organic coconut, water, and guar gum. I placed the can in the fridge over night as suggested.
The following afternoon, I was ready to try making the topping. This is what the coconut looked like in my mixing bowl after I poured off the water.
