gluten free flour-less peanut butter cookies


Gluten Free, Flourless, Peanut Butter Cookies
I'm gluten free and mostly grain free now due to allergies. Good thing I pinned this amazing recipe from The Domesticated Princess ! It sounds crazy, but there's only three ingredients! 
Here's how to make:
Preheat oven to 350 degrees
In med bowl mix, 1 cup of sugar, 1 cup of peanut butter ( I used Smucker's Natural- peanuts and salt) and 1 egg
Scoop or roll into balls and place onto cookie sheet. Use a fork to criss cross the tops and press flat. You can sprinkle with sugar, but they don't need it. Bake for 10-12 minutes
They fantastic!!!!!! Best peanut butter cookie I ever had or made!  My hubby liked them too.
You can also add chocolate chips to your batter.
 They look delicious on the iron stone plate's I bought at Clover Market last Sunday:)

    1. These are so simple!!!! You will love them:) I've tried other recipes and using organic peanut butter. Wasn't nearly as good as this recipe. I totally recommend Smuckers natural peanut butter. I'm big on organic, but have had issues with stomach upset with it! I'm allergic to all grains now and flourless is amazing! I have a recipe coming for flourless brownies made with black beans and they are awesome:)

    Aren't these the best? I have been making these for years....it is so hard to get the gluten free word out there!
    Check out the eatingglutenfree.com website. My niece, also known as Betsy, and her neighbor started this business after a dozen of our fmaily members were diagnosed with celiac disease, including her mother. Now, she has a few gluten free kids as well. I have been eating gluten free for 12 years, man that sounds like a LONG time! three of our daughters also eat gluten free. It is fun to add the guittard white chocolate chips to these, I have used chunky peanut butter and added milk chocolate chips to these also. Sometimes a chocolate kiss...htis is the recipe I share in the store when I talk to someone in the gluten free section who is just starting out. They are always so appreciative.....oh, I have also rolled thes out a bit and cut them into hearts before baking....kinda fun!

      I'm so glad you stopped by. Wow, that's a lot of celaic's in the family. So far we have 3. Although my brother just realized how tired he isn't, when he doesn't do wheat! I've made these at least four times now. I did use chunky PB once and just last night choc-chips!! Ever since I'm grain free, I've been looking for that! I'll definitely stop by the website. Thanks so much for sharing it. Gluten free since 2004, grain free just this past year, except i can still eat corn:) Snack on!!!
