gluten free crepe style pancakes

I love having breakfast for dinner during the cold months, especially pancakes. Here's my super easy recipe for gluten free, grain free, dairy free (except the pat of butter) crepe style, pancakes made with a Ninja food processor.

Gluten Free crepe style pancakes
Ingredients-add all to your Ninja food processor and process until smooth:
  • 15.5 oz can white navy beans rinsed and drained-make sure you have gf beans, you can also add rice or rice flour if beans do not agree with you:)
  • 2 eggs
  • tsp vanilla
  • tsp baking powder
  • tsp baking soda
  • 1/4 cup potato starch
  • 1/2 cup almond flour
  • 1 cup water or milk
Your batter will be very pourable. Add additional almond flour, one table spoon at at time, to thicken, if necessary. Pour onto a hot, nonstick fry pan or griddle, lightly sprayed with grape seed or any other light cooking oil. I find it easiest to pour one large pancake at a time. Don't flip until you see lots of bubbles formed in your pancake and it's looking golden underneath. Top with butter and your favorite maple syrup or jam. 
GF Storage Ideas:
I keep my gf baking supplies together in a tote now. The little plastic bags of specialty flour spill easily just setting in the cupboard.  In my bin, everything I need is together, kept fresh, and ready for a recipe.

  1. OOOh these look yummy, I am gluten free so most definitely will try these out, I am wondering if there is another word for Navy beans as I don't know what they are in New Zealand, are they black eyed beans or baked beans?

      I apologize if you copied my recipe, i forgot to add the milk or water to my list of ingredients, oops:) It's there now. Navy beans are the small white beans, They call them different names here including pinto and northern. You can also use butter beans. Anything light in color. Just make sure you rinse the canned ones! I'll be visiting again soon. Love your blog. Following you too:)

    1. Thanks. I really like these, but not everyone can handle the beans:) So, if you make them and find you have a problem, substitute rice or rice flour for the beans:) Happy New Year
